Well, it is simple and complicated all at once, but it all comes back to two things beautiful land and amazing cooks.
Red Earth comes from Red Earth Creek that flows through the pastures that hold some of my favorite memories. Just like life, it’s waters can rise fast and roar with turbulence as well as be calm and peaceful. It knows both high prosperous waters and the dry tears of drought. It has been a life source for generations of cattle, wildlife and families. It’s colors will take your breath away in the fall and give just a glimpse of God’s brilliance. It has seen wagon trails and cattle drives. It has seen floods and famine. It is my favorite place on earth and it too has served as a table.
Table comes from the amazing cooks that have been in my life and amazing ways they created a table. It was not so much about the recipes but it was about the table they created. It might be a table in a little living room with recipes of leftovers; a table of coolers, endgates, and tablecloth of buffalo grass near Red Earth Creek with food that was perfect after a day of trailing cattle; a table of bus seats on the way to road game with “school bus bars” and bologna sandwiches; a table in a church basement surround by people you have known your entire life. The food was not always fancy but it was perfect and it was made with love. It was the people that came to the table and walked through life together, for a lifetime or only maybe for only a moment. I have been blessed to have had so many amazing cooks in my life including Red Earth Creek neighbors with their famous pies and lasagna, family friends with their Sunday dinners of roast beef, mashed potatoes and ice cream dessert, grandmas with homemade doughnuts, little loaves for wheat bread and the biggest influence my mom who just seemed to make everything. My mom always made sure people were fed and fed well. Christmas cakes for special friends, birthday cakes, anniversary cakes, wedding cakes. Cookies, bars, kolaches and doughnuts, she knew who liked what. She made sure everyone had a “table”.
So, there it is Red Earth Table. The combination of beautiful land with food passed down from beautiful people creating the perfect table.
